I’ve been wanting to bake my favourite easy/somewhat healthy treat of all-time AKA chocolate chip banana bread for so long, but my bananas never seem to last long enough in the house to reach that icky brown/overripe point. 😛 In order for me to even attempt this recipe, I had to make sure I had about 4 very ripe bananas set aside in a paper bag, so I wouldn’t touch them. I will have to start buying more bananas from now on…
I’m absolutely crazy about my vegan chocolate chip banana bread! I used to make it all of the time and I honestly never get tired of it. I did want to try using the same killer recipe in a muffin tin though to bake some easy on-the-go muffins instead. The result? Perfectly compact, soft, moist, and delicious little banana cakes of goodness. I may have gone a little overboard on the dark chocolate chips though…
Of course, you can never have too many chocolate chips, am I right? 😉
If you have some old bananas kickin’ around, be sure to try this recipe! It’s so simple and since it’s vegan it requires very few ingredients. I even brought some to work and everybody loved them, vegans and non-vegans alike! The recipe makes about a dozen muffins, or enough to fill up 1 small muffin tin. Feel free to double the recipe if you want to bake two tins — these babies get eaten up fast!
Now excuse me while I shamelessly devour three of these bad boys for dessert.

1/3 cup vegan butter, melted
1/4 cup organic sugar (or desired sweetener)
1/4 cup maple syrup
1/4 cup coconut oil, melted
1 tsp. pure vanilla extract
1 tsp. baking soda
1 pinch of salt
